Pumpkin Pizza Pockets

It's Wickedly Delicious Wednesday, and this week we're making personalized pizza pockets with a fun fall twist!

  • Store bought pizza dough
  • Pizza sauce
  • Shredded mozzarella cheese
  • Pizza Toppings:
    • Pepperoni
    • Italian Sausage
    • Black Olive
Special Hardware
  • Jack 'o Lantern Baking Pan
  1. Roll out the pizza dough and cut it into squares. Place one in each pumpkin baking cavity.
  2. Add a small amount of pizza sauce and a pinch of shredded mozzarella cheese into the pizza pocket.
  3. Add your choice of ingredients. For ours, we used pepperoni, Italian sausage, and black olives! Top with a bit more sauce and shredded cheese.
  4. Once the pizza pockets are filled, fold over the dough to seal them. Make sure to leave a few slits in the dough to ventilate the inside.
  5. Bake as directed on the pizza dough packaging.
  6. Once the pizza pockets are finished baking, allow them to cool a few minutes and enjoy!

Alright, who doesn't love pizza, in one way or another? When I was a kid, pizza rolls were my jam, and making these pumpkin pizza pockets totally reminded me of those! I feel like I say this every Wednesday, but these were so easy to make and they tasted awesome!

What's really great about making pizza pockets like this at home is that you get to use whatever fresh ingredients you choose and can even switch them up on a pizza-by-pizza basis, depending on your topping preferences or what you're in the mood for. And if you've got kids (or even a group of friends that are hanging out!), this is a great hands-on kitchen activity! The only thing you really want to watch out for is that the dough isn't too thick on the side that's facing up, otherwise it may not cook all the way.

When it comes to finding the specialty pan, most craft stores have baking sections these days and starting mid-summer, you should be able to find a baking pan with jack 'o lantern molds or some other Halloween-esque specialty baking pan. (And if all else fails, I'm sure you'll be able to find something online!) I feel like these are usually intended to be used for baking desserts and sweet treats, but no one's stopping you from going the savory route!

So the next time you're planning on pizza for dinner, think about skipping both the delivery and the frozen aisle - you could have fresh pizza pockets like these for a fun Halloween meal before you know it!
